探天津民俗文化之饮食文化

──狗不理包子


前一段时间,央视播出的纪录片《舌尖上的中国》以独特的视角带我们领略了祖国大江南北的饮食文化。俗话说“民以食为天”,而我又是生于长于素有“美食之都”之称的天津,更对饮食文化有着非同一般的感悟。作为天津市民的一分子,也作为小螺号记者团的小记者,我特别开心可以和大家分享我在天津饮食文化探索之旅中的收获。

看过视频短片,想必大家对我今日探究的天津传统饮食文化的主题已有所了解。我们对“狗不理”并不陌生。狗不理是中国百年金牌老字号,列于天津美食三绝之首,是中华灿烂饮食文化中的瑰宝,也是天津的一张名片。俗话说:“不到长城非好汉。”我这里要加上一句:到天津,不吃狗不理包子是遗憾。   

溯源老字号创始,品鉴百余年传奇,感受传统饮食文化之精髓,也只有位于天津市和平区山东路77的“狗不理总店”才能将其独特魅力彰显得淋漓尽致。

这座古香古色的明清式建筑,最夺目的便是悬于正中的狗不理牌匾了。它是由中国画画家、清宣统帝爱新觉罗·溥仪之堂弟爱新觉罗·溥佐先生亲笔题写

走进店面,映入眼帘的便是电子屏“狗不理欢迎您”。在店面两侧悬挂着“中华老字号”和“国家级非物质文化遗产”称号的牌匾。凝望这充满历史积淀的老字号,以及国家授予的这份值得传承的殊荣,我对“狗不理”的起源更有了进一步探究的渴望。

继续前行,便是休息区。最吸引我目光的是悬于大厅正中位置的木刻大匾,详细介绍了狗不理的起源。掐指算来,“狗不理”创始于一八五八年,距今正好有一百六十年的历史。

驻足细读“狗不理”的起源简介,我仿佛又回到160年前的清朝咸丰年间。

据记载,1831,清朝道光年间,天津武清县有一户农家,四十岁喜得贵子,为求平安取名叫“狗子”。狗子长到十四岁时,来到天津学手艺,在一家蒸食铺做伙计,由于狗子心灵手巧、勤奋好学,很快就练就了一手好活儿。

 According to the record, in 1831, during the Qing Dynasty, when Emperor Dao Guang was in region, in the Wuqing County of Tianjin City, there lived a farmer family. A couple had their only son at the age of 40 and named him Gouzi (literally means puppy) in the hope of having a safe and sound life. At the age of 14, Gouzi started to learn skills in Tianjin. He helped out in a steamed buns store and he soon gained some great skills due to the fact that he was clever in mind, skillful in hand as well as diligent in the work.

其后,狗子自己摆起了包子摊。他发明了水馅、半发面的工艺,制作的包子口感柔软、鲜香不腻,包子外表形似白菊花。引得十里八乡的人都来吃包子,生意十分兴隆。狗子忙生意顾不上与客人说话。吃包子的人们都说:狗子卖包子不理人这样天长日久,人们就叫狗不理

 Later on, he opened his own Baozi (steamed stuffed bun) store. He invented watery filling and half-leaven dough. The Baozi made by him tasted soft, mellow and delicious with fresh palatability and fat but not greasy, as well as looked like White Chrysanthemums. People from miles away came to eat his Baozi. Hence its business was so prosperous that Gouzi was busy in making Baozi and had no time to have a word with the customers. Some customers said that Gouzi was so busy that he started to ignore people. As time went by, everyone started calling him Gou Bu Li (literally means dog ignores). 

当年,直隶总督袁世凯吃过狗不理包子后连声叫绝,随即进京入宫将包子敬献给慈禧太后。慈禧品尝后凤颜大悦,盛赞曰:“山中走兽云中燕,腹地牛羊海底鲜,不及狗不理包子香矣,食之长寿也。”从此,“狗不理”名声大振。

The president of the Chinese Republic, Yuan Shikai, praised Gou Bu Li profoundly after he tasted them. He then immediately brought Gou Bu Li Baozi to the Empress Dowager, Cixi, who was very pleased with the taste and commented, “The quadrupeds running around in the mountains, the wild geese flying between the clouds, the cattle and sheep walking on the ground and the rare seafoods living in the deep ocean are not as appetizing as Gou Bu Li Baozi. One can live a long life after eating Gou Bu Li. Since then, Gou Bu Li has gained a huge reputation. 

随着时间的推移,狗不理包子铺的生意更加兴旺,狗不理包子受到越来越多人的青睐。新中国成立后,在天津市政府的支持下,于天津市和平区山东路77号开设了狗不理总店。党和国家领导人毛泽东、刘少奇、周恩来、邓小平、江泽民、胡锦涛等多次品尝狗不理包子,都给予了高度评价。

As time went by, the business of Gou Bu Li Baozi thrived and more and more people liked Gou Bu Li Baozi. After Peoples Republic of China was founded, Gou Bu Li was re-born. With the support of Tianjin government, Gou Bu Li (now called Go Believe) head store was opened at No. 77, Shan Dong Road, Heping District, Tianjin. Leaders of our Party and State have tasted Gou Bu Li so many times and thought highly of it, such as Chairman Mao Zedong, Chairman Liu Shaoqi, Premier Zhou enlai and so on.  

随着一位用餐客人的招呼声,打断了我的沉思。原来是看到我这身穿越的装扮,想邀请我一起合影,我欣然应允,也为这位外地游客的天津之行带来了许多欢乐。

在重温“狗不理”起源的同时,我更深入地了解到狗不理百年传承的发展史。展今朝,百年老店,以自身独特的魅力,无论是从内在食品质量,还是外在用餐环境,都与时俱进,秉承百年来严苛的手工技艺,将健康的饮食,绿色的饮食文化,带入到我们千家万户。

这是陈列于店堂间的狗不理总店的平面结构图。一楼属于快餐、简餐区,满足老百姓普通日常用餐需求。二楼、三楼是颇具中式装修特色的宴请区域,让您在用餐之余,更能细细品味天津饮食文化的精髓,狗不理老店是现代与传统完美结合的典范。

历经几代大师的不断创新和改良,狗不理包子在秉承传统的猪肉包、三鲜包的基础上又不断创新品种,如海鲜包、野菜包、全蟹包等,共六大系列一百多个品种,真正做到了包包有特色,包包是美味,薄皮馅大,十八个褶,咬一口鲜美不油腻,准保您回味无穷。百年老店狗不理包子,先后摘取“商业部优质产品金鼎奖”、“中国最佳名小吃”、“国际名小吃”等多个国内外评选的大奖,不愧是我们津门的特色名美食!
